At present, Sarah Ann Pike is the most likely candidate for being Charles Hitchcock's second wife.
Sarah Pike married Charles in 1836. He had four known children from his first marriage and had a further three with Sarah. The couple settled in Stratford where Charles started a fishmongery business.
She possibly died in 1867, aged 57.

Cornelius Curby was found guilty of stealing a bundle of rhubarb from Sarah Hitchcock's greengrocery and sentenced to 14 days imprisonment.[26]
London Stratford Times and South Essex Gazette (30/Mar/1861)
This appears to have been a separate incident to the one described in the Chelmsford Chronicle the day before. As a "Mr. Hitchcock" is named, this may related to Joseph Hitchcock (b. ~1829) rather than to his mother, Sarah.
Research Notes
- Many thanks to Angie, who happens to be a second cousin (once removed) of Alfred Hitchcock, for providing details of the marriage!
- It's very likely that the Pikes were living on Ratcliff Highway at the time of the first Ratcliff Highway murder in December 1811 of Timothy Marr and his family.
- Not the Sarah Hitchcock who died in 1867 in Dunmow. Although the right age, her death certificate gives her details as being the wife of farm labourer James Hitchcock.
- A 63-year-old widow named Sarah Hitchcock (b. ~1808) who was born in Middlesex is listed as an inmate of the West Ham Union Workhouse in the 1871 Census — it seems highly unlikely this would be Charles' widow as surely her children would have cared for her in her old age
- The Sarah Hitchcock who died in 1897 in West Ham was very likely the wife of Henry Hitchcock (b. 1816), who worked as a blacksmith, and they lived on Hoy Street, West Ham. Henry was likely born in South Tidworth.
